pineapple cubes (fresh is better, but canned OK- more sugar)
1 green apple
1 guava
1 sliced cucumber
Peanut sauce:
1 cup Chunky peanut butter
1 meduim onion
2-3 garlic pips
1-3 TBSP of Chilli paste
1 stalk lemon grass
3-4 pieces of dried tamarind or 1 TB of tamarind paste
1-2 cups water
Instructions
Steam veggies brieefly, keeping crispy.
Cut up all fruit and veggies into bitesize cubes.
Mix together in a bowl and set aside. This may be kept in a sealed container and refridgerated for future meals before adding peanut sauce.
Blend onions, garlic.
Add chilli paste(you can substitute fresh or dried red chillies, but remove seeds if you want it less spicey.)
Fry in vegetable oil(or other low carb oil)until it bubbles out through the oil.
Add chunky peanut butter, lemon grass, tamarind and 1-2 cups water.
Cook until thickens, then add sugar

Suggestions
Dish can be eaten with sauce served hot or cold later on. Both are delicious!
